Curtis and I had the most delicious dinner last night! It was a broiled spicy salmon with sweet pineapple on a bed of cilantro rice. The meal turned out beautiful and was incredibly healthy. I felt like it was more of a restaurant fancy dinner than something I could do at home! The great thing is that it's super easy to make! Like, realllly easy!! I found this recipe on Martha Stewart.

INGREDIENTS: Salmon fillet, half of a pineapple: cut, cored and sliced in to 6 long strips, brown rice, cilantro roughly chopped, 1/4 cup maple syrup, 1/4 tsp. cayenne pepper, sea salt and ground pepper.
Place your oven rack in top position, and heat your broiler. Cook your rice the way you normally do. In a small bowl, mix maple syrup and cayenne pepper together. Season your salmon with salt and pepper and place on a tin foil covered baking sheet. Next place your pineapple around the salmon, all one layer. Brush the salmon and pineapple with half of your maple syrup + cayenne pepper glaze. Broil salmon until it's cooked through (approx 7 - 11 minutes depending on thickness). Halfway through broiling, brush salmon and pineapple with the other half of glaze mixture. Once cooked, cut your pineapple in to small edible chunks. In a bowl, mix in cilantro with the rice. Place a bed of the rice on your dinner plates, adding your the salmon and pineapple on top.
This is a lovely date night kinda meal whether it be with your partner or with your girlfriends! All you need is a glass of wine and you're set. Happy eating!
